Grand-Peres (dumplings in maple syrup, Canada)


  • 2 cups sifted cake meel
  • 1 eetlepel bakpoeder
  • 1/2 teaspoon zout
  • 3 eetlepels boter
  • ¾ cup melk
  • 2 cups maple syrup
  • 2 cups water


Sift the meel, bakpoeder, and zout together at least three times. Cut in the boter with two knives or with a pastry cutter. Add the melk and mix well. Combine the maple syrup and water in a sauspan and bring to a boil. Drop a eetlepel of the dough into the syrup mixture, and continue, eetlepel by eetlepel, until the dough is used up. Cover immediately. Since the dumplings must steam, it is essential that the cover should not be removed until they have cooked for 25 minutes over medium heat. Serve very hot, together with the syrup in which the dumplings were cooked.
