Adobong Baboy (Pork Adobo)


  • 1 1/2 to 2 pounds of pork shoulder or butt
  • cut into 1-1/2" cubes
  • 8-10 cloves garlic
  • 1 cup white vinegar
  • 1 cup water
  • 1-1/2 tsp salt
  • 2 bay leaves
  • 1/2 teaspoon ground black pepper
  • Oil


1. Cut pork into serving pieces. 2. Put pork and all other ingredients except oil into a pot and marinade for at least 1/2 hour. 3. Bring to a boil, then reduce heat and simmer until pork is tender. 4. Remove pork from pan. Boil liquid over high heat until reduced and thickened. 5. Strain into small bowl and spoon fat from top into frying pan. 6. Add oil and fry the pork pieces until brown and crisp.
